Energy Bites

I made my own version of "Energy Bites" a few days ago. They are all gone now and I didn't take any pictures. More or less I threw everything healthy-esque I could think of that I had on hand into my mixer. Sonny and I both really enjoyed them and they seemed to help lift my very very pregnant, very tired body out of the deep pit of exhaustion I've been in. I wanted to list my ingredients here so I wouldn't forget. I didn't really measure anything. Just threw it all in. :)

Energy Bites

Peanut butter
Honey
Coconut oil
Flaxseed
Wheat germ
Shredded coconut
Chocolate chips
Oatmeal

I could have done without the honey as the regular chunky PB I used had plenty of sugar. Next time I will also go really easy on the chocolate chips. I added too many and they kind of took over the taste. I'm thinking of trying dates as the binding ingredient instead of peanut butter. Still high in calories, but no saturated fat and and it would be all natural. Maybe with some chopped almonds?
