Chicken Pevear
A staple at my mom's house all year round! Best chicken salad in the world.
Marinate 6 chicken breasts in soy sauce 1-2 hours.
Heat 4T of butter and 4 T of oil. Cook chicken breasts 7 minutes on each side. Then slice (or tear) chicken into strips and toss with 1-2 heads of lettuce and 2 cups of chinese noodles.
Dressing #1
2 T peanut oil (I use sesame)
2 T vinegar
2 T soy sauce
2-3 T mayonaise
Dressing #2
1/4 C sesame seeds browned lightly in a skillet
2/3 C oil
2 T lemon juice
2 T vinegar
2 T sugar
1 clove garlic crushed
1 1/2 t salt
Make the dressings separately and pour over the entire salad just before you serve.
